ABOUT HIJIRI
Sake brewed with nature of Gunma(prefecture)
Located in the middle of Gunma, Hijiri is the sake brewery with a long history, which goes back to Edo era. Since 1841, we started to brew sake within the rich naturally blessed green environment. We use the underflow water runs through Josh Mount Akagi in southwest for brewing sake. For 7 generations, we have succeeded to pass our special skill and tradition contentiously for 170 years. 7th wearhouse man and a chief brewer, kensuke imai, had rewarded with 1st prize in national sake competition in 2014, 4 years after he promoted to a new chief brewer.
HIJIRI's history
“By this name the ancients of the continent celebrated the sanctity of the sake” – Otomono tabito (poet) as in the poem above, Hijiri means well clear liquor Ricewine. The first, senbei imai. started business as raw silk dealer and pawnbroker’s then soon developed into sake brewing. And it succeeded to pass the skill and the tradition for 150 years, through 6 generations from end of edo period to Heisei period.
Three Kiso Shrine is located in north our brewery, and it has a legend of loyal retainers of Yoshinaka Kiso. In the legend, it is said that ancestors of Imai family is one of these loyal retainers, Shirou Kanehira Imai. Hijiri has brewed Japanese sake using the cool and clear spring water from the shrine. At the beginning of production of sake, Hijiri produced and sold off 300 stones a year (approximately 30,000 bottles in a 1.8 liter bottle). Before the war, our main product was sake "Kisogawa" range, but it was forced to stop the production by law to control companies while the war. Meanwhile, we produced the alcohol and released "聖焼酎(Hiriji Shochu)" soon after the war and we restarted production of the Japanese sake in 1955 and released Japanese sake range "聖冠(Kiyoshi Kanmuri)". And we had been selling "ふるさと上州シリーズ(Furusato Joshu series)" including "関東の華(Kanto no Hana)" to date, also, we produce and sell liqueur, fruit wine(prum wine and Yuzu wine) and Narazuke(vegetables pickled in sake dregs) too.

Hijiri Yamadanishiki Junmai ginjo

Thanks to it's umami and acidity, it is easy to match with food.
This matches perfectly with the oily food  such as the loti of duck
or the steak, or the savory food such as Okonomiyaki.

MESSAGE

The sake brewing of the 27th Heisei liquor year has started. Since 2011, Kensuke Imai, 7th kuramoto (chief brewer, acts as a Toji(chief brewer) succeeded from Kiroku Ohara, Nanbu Toji(southern chief brewer) who were master craftsman. And from 2012, we brew our sake only with employee of Hijiri Sake Co,.ltd. The sake brewing of this year advances smoothly and we aim at the sophisticated sake and pursuit the quality by passing the traditional skill with younger members of company.
